Both Jan and Kirstine have a master’s degree in history, and their fascination with the old days is reflected in many of the choices made on the farm. Their entire concept is built around the inspiration from Kirstine’s grandmother’s farm in Lolland in combination with their many cultural trips in French and Italian wine regions, where they always aim to stay at small rural agriturismos, where they can find inspiration in both culinary and for the farm’s interior design.
Kirstine is both a farmer and a cook. Kirstine’s greatest passions are the food, the ingredients, the field to fork, and sustainability in her food. Kirstine is always happy when she plans a menu, which she does most of the time.
So, there is a reason why Kirstine took the leap in 2017 and left the consulting industry and the glass buildings in inner Copenhagen to become a full-time cook and farmer.
Jan always tells stories – about animals, sustainability, society, and life on the farm. Jan is always happy when he can tell stories, and he mostly does.
Jan is passionate about talking about sustainability and helping even more people with the sustainable transition, whether they are guests, companies, or organisations.
